Scientists make chocolate colourful

ETH Zurich researchers are making chocolates shimmer in rainbow colours – without the addition of colorants.
They have found a way to imprint a special structure on the surface of the chocolate to create a targeted colour effect. The structural colour effect is similar to a chameleon: the ordered structure on the surface of its skin modulates and disperses light so that certain colours become visible. The scientists are in discussions with major chocolate manufacturers and plan to establish a spin-off company soon.
