At the end of March, at its headquarters in Perpignan, the family group Cémoi officially launched the major “Frenchoc Premium” project. The project is being carried out in consortium with Lallemand, the world leader in the production and sale of yeast and bacteria for specialist markets such as winemaking, and the French Agricultural Research Centre for International Development (Cirad). “Frenchoc Premium” aims to manage the aromatic profiles of its products throughout the manufacturing process, from bean to chocolate, in a similar way to the winemaking industry.
The aim: to achieve the desired aromatic profile and maintain its premium quality, both in time and space, to allow remote markets to savour the best Frenchmade chocolate. The innovative project, built on a € 2 m investment, is scheduled over five years.
The heir to 200 years of chocolate tradition à la française, Cémoi has now revealed its major ambitions to expand internationally. Building on the “Frenchoc Premium” project, Cémoi also intends to increase the volume of premium chocolate sold for export between 2018 and 2023. “Frenchoc Premium” will allow Cémoi to redefine its offering around the specific requirements of major export markets such as the USA and China.
